Autumn King matures during autumn, but it can also be left in the ground and cultivated for the most part of the winter as required. It is also very well and storable.
Natural location: The origin of the wild carrot is presumed to be the North Americas, the Near East and southern Europe.
In the kitchen: Leave the carrots preferably for as long as possible in the ground and harvest after the tips of the leaves have turned yellow or red. Only whole and fully ripe carrots are good to store. Remove the leaves or cut them off at 3 to 5 cm and keep the carrots unwashed and surrounded with sand in a cold cellar with high humidity. Carrots can be cut into pieces, slices or stripes and used raw with dips or grated in salads. Stir-fried or roasted carrots are delicious as well. Furthermore, they make a great base for soups and stews. Dried carrots also provide a healthy snack in between. Cut the washed carrots into slices and lay them out in the sun or for drying, or place on a baking sheet and dry them in the oven. Carrots are also ideal food for rodents and other pets.
