Nantes Mini Core carrots are an excellent carrot to grow in a home garden. This variation produces roots that have little to no core, giving them a great crunch. Plant seeds one quarter inch deep in moist and relatively warm soil in full sun.
They are best when planted in the spring and can be harvested in summer into the fall. Watch out for weeds as they grow. Using a fertilizer enhances the growth process, especially if they are grown in soil with low nutrients. After 70 days, roots are 6-7 inches and are ready for harvest. Carrots are thick and crunchy with a blunt end. They are best when stored in refrigeration, and delicious when canned as well!
